Orion Smokers input??
I thought about it as they are super cheap but after I got a taste of a "smoked" turkey I decided it was a big fat NO, IMO it lacked flavor and was far from great, I think I could have done better with a weber kettle,- jdt

heat baffle for offset smoker?
Search around for tuning plates and convection plates, I did a baffle and convection plate, its in the wood smokers forum, still on the first page. I posted a picture of the horizon baffle plate which may or may not work for you, they do 16', 20" and 24" The way I understand it, its a dampner...- jdt

If your anywhere near Tulsa Oklahoma talk to Bellfab, he will sell you a heavy gauge offset for $500, A quality lifetime pit with 2-3 times the capacity of a WSM or UDS. http://www.bellfab.com/about.html this is his 20 x 36, last I knew he was getting $450 out of these- jdt

WOW-I would have thought real smokers would understand pulled pork is simply the preparation and cooking of a pork shoulder or butt, it makes no difference how its presented, sliced, hand pulled or schreaded in the traditonal style. From my experience I don't like mesquite at all Hickory is good stronger than Pecan Pecan is great stronger than Maple or Oak Maple is a good all around, Oak is a fuel wood IMO not as much flavor as cherry Cherry is stronger than apple apple is just a touch stonger than pear/peach and plum...- jdt

that would be damn near 3 gallons of drink per day per man, I don't think they would have even seen a british ship I don't know about you but one gallon of rum per day is plenty for me LOL. -
