Hello, I just finished a whole hog block smoker. Here is a few answers to your questions.
You can see the exhaust chimney in this photo, bust a block , you only want one side of it. A piece 8x8x16.
Take that piece and install between 3 block

392 degrees is the temp that galvinist gasses Off. Older galvinised breaks down with time and gasses off at lower temps
Bottom line. Do not use galvinised grates

Separated by a 8" block wall. All block is filled with sand for insulation
The fire chamber has a non mortared block that can slide out, if more charcoal is needed it is delivered through this hole
