    Friday night fajitas

I'm gonna post a ton of pics with this one. After all the rain, a quick inventory of the weeds popping up in the yard we thought it would be a nice evening to chill out back and grill some fajitas. We took a quick trip to the local La Azteca and picked everything up. Pico ingredients...

Caught you gazing at my meat.

That's my style right there, love it when it twitches on the plate! Looks excellent.

    Deli Ham

First, the ham looks great! While I'm stabbing myself in the foot suggesting this, maybe an area of the forum could be available only to paying members, or at least only registered users ( helps my foot wound) for this kind of sharing. You make a reasonable point.

    Inexpensive sealer advice please

Correct, you will see the juice heading towards the seal bar. Hit the seal button and you're golden. ,

    Inexpensive sealer advice please

This is true snd the one downside although it hasn't proven to be a huge issue over the years. You could roll up a paper towel and tuck it in there. When packing wet stuff we just watch and hit the seal button when it starts to flow towards.

    Crispy crunchy buffalo wings

Looks tasty to me! If I buy a pack of whole wings that's exactly how they get cooked. Couple of wings a piece and bang!

    SV or not to SV?

I'd sous vide that sucker then sear it. It'll be perfect! I like to Sous Vide Everything ;) beef when it demands a rare doneness unless it's a 2" thick or less steak and even then it's the perfect way to cook and hold many steaks waiting for a quick steak dinner party and a quick sear.

    Inexpensive sealer advice please

I have this exact Nesco American Harvest model. Have had it for a number of years (5 or 6) you won't go wrong with it and if you ever go with a chamber sealer this is a perfect companion. That's how we use it. Double seal strip, extra wide Wet seal mode Adjustable seal times Manual seal...

    Found a new Lump

Curious your thoughts when your experiment is over. I found it low smoke, neutral in flavor, spark free, low dust, consistent in size with no giant chunks. Still have .oat of the first bag so that could change but at $6.99 for a 15lb bag I went ahead and bought 4 more bags.

    Found a new Lump

Interesting takes and don't get me wrong, I wouldn't never take acacia and start tossing logs in my offset. My go to is mesquite, oak, and hickory with a healthy dose of pecan here and there. But, we're talking lump here. Lump is almost pure carbon, most of the volatiles were burned off...

    Texas Caviar - My take

Looking for something different to try? This stuff is great by itself in a bowl S a side, great for tortilla chips, or even on a pulled pork sammie. Recipe Just happened to be getting ready for Easter lunch and thought I'd share. If you try, I hope you enjoy, I'm sure you will!

    Found a new Lump

I just ran over to Ollie's to grab 4 more bags, they had pallets of the stuff. $6.99 a bag, I'll empty their shelves at that price. Best ever? Nah but at that price for what I found in the bag I bought weeks ago I'm game.

    Found a new Lump

I like to take a stroll through a store close to home about once a month. The store is Ollie's, their inventory changes on the regular and there are deals to be had. A bag of lump I had never seen before caught my eye and I can never resist trying something new so I picked up a bag...

    Quick wings on the Primo

Just some quick wings on a Friday night. Trying to beat the rain. Nothing special here, just the frozen Tyson wings from Sam's but so much better on the grill. Setup: deflectors in, ran with lump 325°f about 30 minutes, no flipping. Served with carrots and celery plus some blue cheese dip...

What are you listening to ?

Every once in awhile a band will roll through town worth seeing but these days that opportunity is less and less often. Just took the wife and kids to see AC DC. Great show, extremely loud lol. Here's the full show:

    Advice for an Offset Smoker

I own an Old Country G2, what do you want to know and I can measure, take pics, etc for you. If you have a Buc-ees anywhere close, I picked mine up there for $1599. The Brazos DLX they had was $1299.
