    The great burger toppings debate

I want the flavor of tender beef to hit me first with the crispy lettuce, onion and the wet tomato to follow. I'm old school I guess. It's a texture thing. BTW a mushroom gravy bacon Swiss cheese burger is bomb....

How hard is it to make bread?

From memory 360 grams AP flour 3/4 cup water 1/2 ts salt 1 1/2 ts instant yeast 1 tb lemon juice 3 tb raw honey 2 tb olive oil Combine everything except the yeast and flour in your mixer bowl and with a bread hook mix on medium high for 3 min. Then add the flour and over that sprinkle the...

How hard is it to make bread?

Mixed in our Zojirushi and baked in the oven. Best of both worlds, hands off mix/knead/1st rise and perfect time/temp control. I have done sourdough this way many times but this is a regular dough. The Zojirushi is the best bread machine on the market.

    Camping and cooking

It's all about grilling and creating for me and all about simplicity for her, we try and compromise. This was originally planned as a 2 night escape to the lake but plans change and we had to cut it a day short. I confess, I failed to get any great pics of the food but I grilled two thin...

Bought a grill for church - big cook tomorrow - warm up

thanks ya'll, the cook itself went well, that grill is perfect for burgers, sausage, Chicken, etc. Although it claims a 20 burger capacity I could squeeze 10 on the grates at once. From the time I lit the charcoal chimney to the time the first batch of burgers came off was 35 minutes. Each...

Bought a grill for church - big cook tomorrow - warm up

Tomorrow is Back to church Sunday, our church is a small country church founded in 1878. My wife's family has been attending for generations. We recently went through discernment and survived! This is typically how a church is shut down. We are small, about 15 people on a given Sunday but...

15 year old Generac not running...replace?

Absolutely would, that's one of the primary benefits of one, it extends the life of your water appliances.

15 year old Generac not running...replace?

Just read this after my previous post. Yep, hard water is an issue for instant hot water. I need to flush ours routinely with vinegar and we only use it a few months each year.

15 year old Generac not running...replace?

We use a portable instant hot water heater at our vacation home. It's easy to drain, winterize and store when we aren't there. The water comes from a 600' deep well and is icy cold. We have to keep the water heater turned way down or it'll boil you. I would hope an expensive permanent model...

15 year old Generac not running...replace?

It's natural gas so there is at least 1 maybe 2 regulators involved here. Replace them, they are cheap. Also, is the line sucking air anywhere along the run? You can buy a 10kw auto starting generator and enclosure for under $2k and wire it in. Is it really natural gas or is it propane?

    Post your favorite knife!

I don't go anywhere without this knife in my pocket. The vintage Uncle Henry is a perfect daily carry for me. I've used it thousands of time for all kinds of things. My wife gave it to me a million years ago for my birthday. About 10 years ago it went missing, a year past and it never...

Can't believe it - never used Cimarron

Got the wheels swapped to the correct location, so much easier to move it now. Lifting from the FB side it was so heavy. Balanced well on a single saw horse. It's almost nose heavy, my G2 has legs under the firebox.

I knew that deluxe models came with a gas igniter and assumed that square inlet was for that. Interesting to think about but I probably won't add that. Who knows.

Building an offset cold smoker- a little advice please.

Looking at your photos, I'd put 3" legs on it just like it is and run it and observe it. You can always make those changes later but you can't go back. Test tweak test tweak Put raw canned biscuits in it and run it, the sticky dough will collect smoke. You can inspect for obvious spots...

Building an offset cold smoker- a little advice please.

Size looks good to me but I'm seeing a photo and not in front of it. Very simple to replace it if you decide you don't like the performance later. Just get those legs on it.

Can't believe it - never used Cimarron

Couple of fires later and the seasoning is done, man it looks good. I've got a corned beef flat in the freezer that I think will be it's first cook. During the fires to season it I noted that this is a pretty easy smoker to manage. Especially for its size. I'm working on a theory regarding...
