NEW MES Question!! (Help, I don't know what I'm buying)

My friends at Amazon.com say ... Sign up to be notified when this item becomes available. I was trolling around to see what the new shelf looks like ... Only one generic picture on Amazon for the Masterbuilt 20075315. So I went to the Masterbuilt website. Thought maybe there'd be something...

NEW MES Question!! (Help, I don't know what I'm buying)

Bear, Thank you for the information. Some how I've missed the threads where you made these comments. Any idea if the shelf in 2.5 can be retrofitted to the 2.0? I'm not having a problem with the exhaust vent.  Have you heard when are the 2.5s due out?

NEW MES Question!! (Help, I don't know what I'm buying)

Sorry. I don't understand how the design differs that much.  I had a MES-30 Gen 1. Currently have an MES-40 Gen 2. Yes, the temperature control is horrible in the Gen 2. Took care of that with an Auber PID controller. Otherwise they're both boxes with a heating element in bottom right and chip...

    mes accuracy

It was also my experience with my MES-30. My MES-40, not so much. As Deming said, "In God we trust. Everyone else brings data."

    Model # 20070512

I have the same smoker. I've never used the water pan. I covered it in foil and left it be. As tropics mentioned, some people fill it with sand before covering it with foil. This creates a heat sink and helps stabilize the internal temperature when the door is opened and closed. I typically open...

I agree the AMNPS is great. I have it and the 18" tube.  The advantage of the mailbox mod shows when I cold smoke. Yesterday I smoked 9# of bacon @ 90 deg. I used  the heat to create the draft, slapped in an 18" tube of Pitmaster in the mailbox and watched it smoke for 7.5 hours. (the smoker is...

    mes accuracy

By "accurate as possible" do you mean knowing what temperature the meat has attained? If so, get the Maverick suggested by David (theMule69). If "accurate as possible" means getting the chamber to exactly where you set it, you have two items to consider. 1. The MES controller works with an...

    Not real thriled.....

I had no problems with my MES-30. I'd read about the new MES-40 so when it arrived, I had a Auber PID controller ready to install. Still some variation based on where I put the "chamber probe", but the control probe stays +/- 1 deg F. I just need to be aware of where I place meat in the the...

    AMNPS question and some qview

Nope. At 6 foot and 205, I don't fit in it. ;{)> My only clue on what's happening is watching the TBS coming out of the MES. As long as I get TBS, I'm happy. And every time I've used the tube smoker, I've gotten a complete burn. I never did get the AMNPS to burn more than one row. Could be a...

    AMNPS question and some qview

I also have an MES-40 2nd gen with a mailbox mod.  I also had problems keeping my AMNPS going past the first row of pellets when I put it in the mailbox. I tried drying the pellets in an oven before lighting.  I bought the 18" tube smoker and it's works very well. Just barely fits in my...

How to chip staves from a bourbon barrel

A neighbor has a wood chipper that hasn't been started in 5 years. Plus he's in FL for the winter. Breaking in would be trivial, but trying to start the chipper would be a bear. I don't have a vise (yet). I need to go to AR and get my father's workbench, which does have a vise and bring it...

How to chip staves from a bourbon barrel

Yeah, I've done the differential beer thing. Not as much as I used to. Still having all 10 fingers is a good thing.

How to chip staves from a bourbon barrel

My friends often give me smoking related presents. They mean well and I thank them knowing I'll never use the gift (usually rub which is too salty for my taste). This year I received some bourbon barrel staves. I run my MES-40 in a dual configuration. For long smokes I set up the mailbox and...

    Another turducken thread

Bacon is the duct tape of food.  Have you tried duck wrapped in bacon in chicken wrapped in bacon in a turkey wrapped in bacon?

New to smoking and new to this forum

I've heard good things about the Maverick ET-?472?. It's a dual probe system with a remote. Being able to know internal temp and NOT going outside (in Maine, in the winter) could be a plus. I personally use the iGrill. I like getting a CSV and pdf file of the smoking profile.

New to smoking and new to this forum

And that's the great thing about low and slow! Even the smokes that didn't turn out quite like planned, still taste good. Have you checked your smoker internal temperature with thermometers other than the MES built in thermometer? A lot of people (including me) have noticed the chamber is...

Did you make it to your desired internal temperature?  Or did the stall get you? BTW, nice looking smoker! (I have the MES-40 version so I might be biased. )

1st Mac & Cheese in my mod MES40

One reason to not mount the mailbox directly to the MES: The flexible hose allows the smoke to cool for cold smoking. Other people may have configuration issues where it's more convenient to move the mailbox around. About your MES Gen-2 controller (this means it's at the front of the smoker...
