    First Brisket in the MES

The stall around 160 is classic. And the great part about smoking - even the "not what I meant to have happen" smokes tend to be highly enjoyable. I wondered about the plywood. I tend to make a mess in front of my smoker when working with partially smoked meat (generally going to braise). I put...

    First Brisket in the MES

How long did it take? The one time I tried a "small" pork butt, it took about the same amount of time as one 2x larger. Is that a piece of plywood under the MES? If so, the purpose?

AMPS in MES 40" first impressions (3/5)

I had marginal results with the AMNPS 5x8. I switched to the 18" tube and the mailbox mod and have had great results. I've used it for "standard" hot smokes (pork butt & brisket) and not so hot smoking (bacon @ 95 deg). The mailbox mod will make for a little more gear to pack when camping.

Hi, newbie smoker jumping in to the deep end, need advice.. (whole brisket)

I've been smoking the "Best Barbecue Beans on the Planet". You can find the recipe on the bottom half of this page. http://bbqu.net/season3/305_4.html I've started smoking them the day before I smoke the meat and put them in the fridge. A couple of hours before the meat's finished, I pull them...

    Extension cord help

I'm confused. How does an extension cord help with temperature swings in an MES-40?

    MES-40 Model 20070512 Temperature Problems

I'll try to member to take temps the next time I smoke @ 225. It won't be for a few weeks. I smoke some Canadian Bacon late this week (@ 190) and then I'm out and about until late May. I do not have a Kill A Watt meter. It would be interesting, but I'm not interested enough to pull the...

    MES-40 Model 20070512 Temperature Problems

When I started using my MES-40, I used a Thermo Hawk (touchless IR temperature device) to check the heat loss through the window. It looked something like this: The setpoint was 225. I did not document (and don't remember) how long the smoker had been at temperature. Essentially, the window...

    MES-40 Model 20070512 Temperature Problems

So ... today (April 10, 2015) I smoked the 4 Cheese Mac & Cheese in a 1/2 size steam table pan and a 9x13x3 pan of the Planet's Best Baked Beans.  @Bearcarver  and I messaged and he said ... "I only smoke on shelf 2". (It's late and I may not remember correctly, but I'm hanging on waiting to...

    MES-40 Model 20070512 Temperature Problems

And then again, maybe not. In this thread I learned there's a new MES-40, gen 2.5 available. I decided to do a temperature profile. Using Bearcarver's protocol, I set the smoker @ 225 and my probes on opposite sides of the same shelf. This resulted in the following graph. Other than an...

NEW MES Question!! (Help, I don't know what I'm buying)

SoFloGator ... does graduating from UWF in Pensacola make me a NoWeFloGator, or would I have to have matriculated from UF? I appreciate the pictures. Sad I had to see them here instead of on Masterbuilt's site. Happy that it could happen here. WTF are they thinking? It's cool that we're both...

NEW MES Question!! (Help, I don't know what I'm buying)

Bear, I'd like to say how wrong you are about the tech support. Unfortunately, you nailed it. <sigh> She did say if I changed anything myself, I might "void the warranty".  Based on http://www.smokingmeatforums.com/t/151864/mes-40-model-20070512-temperature-problems I'm guessing I've pretty...

NEW MES Question!! (Help, I don't know what I'm buying)

I called MB tech support. Talked with a nice person. I figured if there was a difference in the drip deflector (which also affects heat flow), and the drip deflector just popped out (ala johnnyb54), I'd ask if I could buy the new drip deflector. The person I chatted with said the drip deflector...
