New to Smoking - Phoenix, AZ

Can you post a couple of photos of the inside setup? I have a vertical smoker and as I mentioned i changed out the pan altogether, which sounds like you may have also. I am in no way an expert at all but have monkeyed around with the heat source a little since I bought mine a couple of years...

One more thought. Just looked at your 'wok' pan. I wonder if the pan is getting too much air flow with all those holes. Maybe close them off (aluminum foil maybe?). On my vertical I got rid of the vented pan and went with a solid cast iron skillet. It worked much better in my case. Good Luck !!

New to Smoking - Phoenix, AZ

Oops.....guess I misread, but if you do lower the amount of charcoal you use and then use flavoring woods - maybe the following comments would help you..........Have you tried soaking your wood? Or at least some of the wood for at least a day?. I normally would take about 1/2 of the wood chunks...

    I'm still around!

Hey there.... When I did a search for Cookinpellets.com they show that there is a dealer in Phoenix for their product. Have you checked into the local supplier?

    I'm still around!

I actually did.  I ended up getting a DEMO model of the Daniel Boone.  Was super discounted, and it came with the FULL Warranty as if new.   Was used once to show off a Turkey on the grill.  Heck there was barely any soot, or burn marks anywhere on the entire grill.  I was told that the grill...

Hey Joe. I'm sure glad you posted. Thanks to your post I think I have decided to pick up a GMG Daniel Boone grill. Found a great deal @ Barbecue Island. Just wish I had the skills to make the mods that you have done. The extra grill rack inside and the tray on the bottom between the grill legs...

Thanks for the reply. I see where Costco is having the Traeger's on their 'tour'' through the various stores in the Phoenix area in the next few weeks. Figured I'd take a look there also.

    I'm still around!

I am around here too.....but as you mentioned...life sometimes does get in the way.  I am thinking seriously about looking at a Traeger Pellet smoker.... I guess the older I get the less work I want to do to cook...but still want to enjoy the experience of the smoke, and course the GREAT...

    Masterbuilt propane smokers

A lot of MB owners (me included) have created some form of Stand that sits over the burner...and then sit the skillet atop that. Some have used a gas stove cast iron burner - I just happened to have a piece of material that worked for me to raise up the skillet above the burner. Check around...

    Masterbuilt propane smokers

Did you try not using the original pan?......I ditched it after the 1st cook. Seemed to work better overall for me..

    Masterbuilt propane smokers

I love my Mastebuilt, and while there are many many more that I'm sure are better, the Dual Pro fits my needs. 1st off, I am cooking for my wife and I about 75% of the time, and once in a while some neighbors or my sons family. 2nd Having a bigger unit means wasted space for me, as well as more...

    Masterbuilt propane smokers

I agree with the last idea...that is to get some form of burner grate.... or cast iron trivet or something that can sit atop the original flame guard.  I homemade mine... then put the cast iron skillet on top of the grate I DO NOT use the original pan at all.  Another thing I do..... is I soak...

    wood

I bought wood in splits in North Phoenix.  I Got some Pecan, Mesquite,  Apple, (they have other fruit woods too)  and seems like I also got a little bit of Oak from them.  I don't think they have hickory...but Pecan is Arizona's Hickory as they say ... GRIN ....They also sell other woods, but...
