    Wife went to Dillons today and brought 3 chickens home for me to smoke. So the WSM is sitting out here doing about 325 degrees. Thought I would try a hot fast smoke. She also brought home two racks of spare ribs. So I'll trim those up and throw them on tomorrow. BillMc

    Minion method reload question

    I have the 18.5 WSM loaded with a trimmed brisket about 15 pounds. I know this is going to be a long smoke. Wondering how to reload, dump fresh coals on the lite ones? Any adive appreciated. BillMc

    Last week when I smoked I took the cover off the WSM. The first thing I noticed was that the fireman had water in it and so did the heat shield. It has been ranging for nearly 12 hours and I am wondering if the cover is doing its job. Is there a better cover then the one that came with it...
