Turned out excellent! Now to cut up the left overs and vac. Will be nice for those fast meals. ife is wanting to dice some up for salad. Guess Ill do that also.

Wife went to Dillons today and brought 3 chickens home for me to smoke. So the WSM is sitting out here doing about 325 degrees. Thought I would try a hot fast smoke. She also brought home two racks of spare ribs. So I'll trim those up and throw them on tomorrow.

I have the 18.5 WSM loaded with a trimmed brisket about 15 pounds. I know this is going to be a long smoke. Wondering how to reload, dump fresh coals on the lite ones? Any adive appreciated.

I am now thinking maybe starting at 3:00 pm Saturday. That will give me a few extra hours. I still need to go buy meat. Will probably do my shopping at SAMs club.

I always make a plate or two of the meat we smoke for the neighbor lady. I hardly ever send over any sides they seem to always get eaten. I really don't mind sharing with her.

Last week when I smoked I took the cover off the WSM. The first thing I noticed was that the fireman had water in it and so did the heat shield. It has been ranging for nearly 12 hours and I am wondering if the cover is doing its job. Is there a better cover then the one that came with it...
Well wife son and neighbor loved the chicken and ribs. Son said chicken was some of the best I have ever done. So I would say it was a successful day smoking.

The chicken is done. Hope it tastes good. Left overs for the vacuum sealer then to the freezer. Makes nice easy meals during the week when it is busy.
