    Chili. The real stuff.

Chili. Real chili. The Tejas way. The way it was intended. No noodles. No beans. No tomatoes. Just meat and chiles. Hence...."chili". 3 lbs chuck roast seared before dicing into 1" cubes. Chili sauce is 6 anchos, 3 guajillos, 1 arbol, a chipotle pepper with adobo sauce, and a clove of garlic...

    Prime Rib Sale

Best in my area so far in term of price and quality is ALDI coming in at $7.99/lb, limit one. Last year I got lucky as Fresh Thyme Market was clearing out the prime rib after Christmas and scored a 23lb USDA Prime in cryovac for $5.39/lb.

    Pop’s brine scalable?

Some folks don't want an honest answer, they just want reassurance they're right and nothing more. 🤷‍♂️

    Gravity charcoal smoker

Looks like a custom home built rig to me which would explain the lack of branding/markings.

It's an inside type of day, guess I'll make a glaze. And some chicken.

Thanks! Was happy with the color, but flavor needs some work yet. It was good, but too sweet without enough heat to balance it out. Going to run it back and add some cayenne to the glaze.

It's an inside type of day, guess I'll make a glaze. And some chicken.

Was going to clear a parh from the deck to the BBQ Shed, but it's -5°F out, so that's not going to happen anymore today. Decided it's a good day to hang out inside, make some eggnog, play some Skip-bo with the family, and mess around with a glaze experiment for 2026's competition season...

Any business owners here who work with their spouse?

Good feedback, appreciate it. In terms of the types of duties being fun vs. boring, I get where you're going. I agree, the stuff she does isn't a lot of fun and not the type of work I prefer to do. However, when she took a role in the company, this was what I had said I needed done and was...

Any business owners here who work with their spouse?

This is kinda where I'm at. I started and have been running this for 3 years now and I have developed a good relationship with my retailers and customers over that time. Up until March of this year, I was a one man show but growth just won't allow for that anymore. I don't want to give up the...

Any business owners here who work with their spouse?

How do you do it? Wife and I have been going round and round over merch designs for our business. She handles the accounting, bills, fulfillment, etc., while I handle the product development, sales and marketing, event scheduling, production, and managing our social media. I have a clear view of...

    Chicago Cracker-Thin 'Za

Because I've had a few pizzas where the crust was a tad bit sweeter than normal that have the color of corn meal to them. Got to thinking....Cap'n Crunch is sweet and made primarily of corn meal, we have a box in the pantry...... add some in and hope for the best. I'm certain that's not what...

    Chicago Cracker-Thin 'Za

Deep dish is a gimmick and not a pizza....a casserole, maybe, but definitely not pizza. The real pizza of the Chicagoland....cracker-thin. But the kicker here is the best cracker thin pizza in the midwest doesn't even come out of Illinois, its from Racine, WI. Wells Brothers. Tried cracking...

Early Christmas gift from the wife.

I'll give it a try but this thing presses so well there's nothing really left but solid matter when it's done. As for carrots, gotta shred them with a cheese grater, then I put the pieces in a hops bag I had laying around from beer brewing and pressed them. 1 carrot yielded about 2 TB of...
