I've been thinking about getting a smaller pit, and Lang is definitely on my list. Keep going back and forth between the 36 and 48. Already have a 250 gal RF on a trailer, so I'm leaning towards the 36.
For under 2k, look at Lang smokers. Reverse flow, and very well built. They were on my short list for a patio sized pit, but I ended up going with a much bigger trailer model from bubba grills. I'm still thinking about getting to get a Lang 36 deluxe for my patio.
Bear, same here. But I refused to turn the heat on. It was 62 in the house. Then my wife called and said we have a showing (selling our home...well, trying to) at 11am... so I reluctantly flipped the switch on.
I've cooked many a fantastic meal on my GMG pellet pooper in a 5 yrs I've had it. Absolutely love the ease of the pellet grill. I do use the amnts mentioned above to add additional smoke flavor, as they burn very clean.

Al, your method of starting your fire is what I also do. I do however, make mine closer to one side of my firebox as it's rather large.

Most of the venison roasts our family gets, I turn into vastrami. Usually do the same as you and separate the 3 roasts, sirloin, top and bottom round. Did about 30# this past fall. We absolutely love the stuff.
I don't use a water pan in my GMG DB. Briskets turn out great.
Agree with Al. Think your set temp isn't the same as your grate temp. I know mines off by 20* . Its no big deal to me. I adjust accordingly.
Looks fantastic. Really like the damper idea for closing off the RB. I may have to do that to mine. Is your new stack the same diameter as the original?
I went big. 250 gal reverse flow.
I've even fired it up for a couple burgers a time or two, lol. I also get most of my wood for free or little cost.
I would like to find a small Lang someday for the back deck.
