    Rough Draft of the Logo..

All good advice and the reason I posted it up.. I need it to appeal to a broad audience.. The one common theme I am seeing though is that the orange color and the font itself is really hard to read so thats going to be a definite thing that we are going to have to remedy. Please keep the...

So Rick did a bang up job on the rough draft of our logo but SWMBO has some concerns.. She has agreed to do some market testing locally and on the web to see if it's...

Which to buy Smoke Hollow Electric or Gas?

I've got a SH No. 6... After your seasoning run..Turn it down to low and make sure you can get it to smoking temps... I ended up having to email SH and have them send out a new regulator assembly for mine because I couldnt get it to run under about 275 w/o throttling the tank valve. They were...

Buying a commercial rub in bulk ??

Check out Big Ron's I tried all 3 of his rubs and REALLY like the Hint of Houston... Commercial rubs for me are just easier... not necessarily cheaper but I like being able to have the repeatability of a commercially made rub... www.bigronswebsite.com

They need to outlaw Costco... w/ QVIEW

Dinner and the dishes are done.... One of each sliced up... HoH on the top and Sweet Mesquite on the bottom. HoH rubbed... this was our favorite... Kirklands Sweet Mesquite... This had a good flavor but had a wierd initial taste that faded as you chewed... Was a little off putting.. I would...

They need to outlaw Costco... w/ QVIEW

So once again the Costco bug has bitten.... Found a pretty decent price on Tri-Tips so in the cart go two of them.. During further shopping some foreign looking substance ended up in our cart because SWMBO thought it sounded good. To be fair I figured I'd do another side by side with Ron's Hint...

Shredded Chuckie Chili and Beer Bread

I think deglazing the burger pan with the merlot added a whole new lair of flavor to it.. Since it was a fairly "dry" Merlot the tannins also added a tartness to it as well.

Shredded Chuckie Chili and Beer Bread

Bread recipe is super simple... 3c Self-Rising flour 12oz room temp beer pinch of Kosher salt I added in 1/4c of diced pickled jalepenos and a couple of big handfuls of Sharp Cheddar I think if I do this in the over again I would brush it with a egg wash.. If I was doing it in the smoker...

    Chuckie's with QView

You are correct they stalled a little at ~150 I just left them alone other than a spritz here and there... When I foil I lay my double layer of foil out and give it a very generous coating of whatever I am using for a spritz.. I try to get it just to the point or pooling on the surface of the...
