I've seen supermarket go for $8.99/lb USDA Choice, and Costco $8.99/lb USDA Prime. Problem is that Costco blade-tenderizes the meat, so you're forced with the decision to cook it med-rare and possibly unsafe, vs. cook to 160 which is WAY to hot for a tri-tip. I've solved that by not buying them...
I'm with doug on this. The bacon weave is on the outside of the fattie and exposed to a 250+ degree "oven" essentially throughout the whole >1 hour cook. It's cooked to safe temp.
