    Tri Tip Prices

I've seen supermarket go for $8.99/lb USDA Choice, and Costco $8.99/lb USDA Prime. Problem is that Costco blade-tenderizes the meat, so you're forced with the decision to cook it med-rare and possibly unsafe, vs. cook to 160 which is WAY  to hot for a tri-tip. I've solved that by not buying them...

    50/50 Burger w/Pics

Yeah, the restaurant here won't cook a 50/50 patty less than medium. With all the fat in there, though, that's not really a problem.

    Lost my Virginity this weekend

I'm with doug on this. The bacon weave is on the outside of the fattie and exposed to a 250+ degree "oven" essentially throughout the whole >1 hour cook. It's cooked to safe temp.  If you want to help crisp up the bacon, try to smoke it hotter, like 300-325 degrees. Nothing in the recipe really...

    First Brisket (Help)

I've done three so far, so I'm clearly not an expert. The issues I've had has been maintaining a moist brisket.  My next one, I'm going to do minimal trimming (mainly just some of the hard fat), cook it fat cap down to protect the meat from the direct heat (I have a vertical water smoker...

    50/50 Burger w/Pics

Was the show talking about this place? https://slaters5050.com/   Slater's 50/50 is about 2 miles from my house. I've pretty much given up on my diet for the rest of this year, so maybe I'll have to head over there for lunch since I'm working from home today ;-)

Does Amount of Meat Affect Temperature?

Make sure you have a spare propane tank on hand anyway. 14lbs (28 total) is going to take a while to smoke at 225. I have the same smoker. At that size, assuming this is brisket, you probably can't fit them both on one rack. So you'll need to have one above the other. That will definitely...

    Advice needed! New to smoking!

I haven't tried anything off an electric smoker. My brother-in-law recently got the MES30 mentioned above, but I haven't had a chance to see it in action or taste its wares just yet. But yeah, the propane running out is a risk. That's one advantage of the Maverick ET-732 remote thermometer I...

    Advice needed! New to smoking!

I have that same one. Plenty of capacity! Here it is, loaded up with two brisket flats, two fatties, and two trays of ABTs. We have a thread here devoted to this model as well: http://www.smokingmeatforums.com/t/113601/initial-setup-and-using-the-masterbuilt-vertical-propane-smoker I'm...

    First Fattie - Mushroom/onion/spinach/gruyere w/ QView...

That's actually an excellent question, and I'm not sure. My wife did the shopping and I was so wrapped up in trying to prep this along with all the other things I was going to cook for a party that I didn't even read the package. I'm guessing only 3-4 ounces each...

    First Fattie - Mushroom/onion/spinach/gruyere w/ QView...

HOLY COW these things are AWESOME! I decided to make two of these with mushroom, onion, spinach and gruyere. I sauteed up the onion until translucent, added the mushroom until they started shrinking, added the spinach to heat and incorporate, all that in about a stick of butter. Then tossed it...
