I talked to Byron at Yoder and he said they stopped installing the smoke stack cover because customers were shutting them while in use. This then created problems with the air flow inside the unit.

There is not a best...only personal preference, I own both kinds 2 offsets and a pellet grill. I like them for different reasons and for different meats. The pellet is nice set it and forget it, stick burner takes more effort but is more rewarding I think.. I do really like the pellet grill...

Hard to tell it does not show a pic of the bag, It also does not tell the manufacturer of those pellets. I can only comment on the Ozark hardwood pellets. You might call to see who makes those in the picture.
Well I used the Ozark hardwood pellets from Tractor supply 40 lb bag was like 5 bucks after tax. They seemed to work fine, heat was good would compare them to the oak flavor of bbq delight. I would buy them again and use.
So I have been lured in by the cheap price and am going to try a bag of Ozark hardwood pellets. Just got off the phone with them and was told that they are safe to use in a pellet grill. No bad binders or additives.

Well my name is the same name as my BBQ team..I started the team back in 1998 I was born and raised in Missouri and wanted a team name that incorporated the state and love of Q so Show Me Smoke was born from the two. (For those that do not know Missouri is known as the show me state).
I have started running my damper in about 2 or three inches..it seems to even out more. Try a biscuit test, put raw out of the can biscuits on it and see how they cook.
