Are you doing actual pork,tenderloins or whole porkloin?I have done porkloins for large crowds. Not 1000 people tho. I have done them on the grill and smoked. My opinion would be to smoke them. I'm guessing 25 -30 loins, that's a lot cook on a grill. It would be to easy for it to get out of...
My guy usually over rolls the cylinder. So for example: If I want a 30' diameter cylinder he will roll it to roughly 28" diameter. $475 seems reasonable. A 6'x10'x1/4" sheet of steel will cost me about $150 or so. Then another $200 to roll and tack.
foil?? Hell, just give them a scrub and put it away. Next time out, just crank the heat and let her burn out. Why lose all the flavor? Pretty sure Aaron Franklin doesn't clean his grates.
