You may want to sear certain foods before smoking by placing meat directly above coals with LID open and FIRE GRATE in high (hot) position for several minutes. Add flavor soaked wood chips to the fire and add 1 part marinade, beer or wine to 3...
I have zero problems with heat control of my REC TEC once the grill heats up good the temperature always stabilizes with my maverick which is set center of grill next to the meat. If you have any problems call Trey at REC TEC he is a great guy and will really jump through hoops to make you...
Environmentalist BS cracks me up. They will go hug a tree because it has feelings but then say they are Vegan! Please veggies have feelings too. I would go around and video all the restaurants that have smoke pouring out of their vents. Tell this chump to go take care of them first.
I have a Chargriller that has done me pretty good over the last 10 years. The only problem I have with it is that it needs attention like a new born baby. I never knew about these temp controllers that stoke the fire for you until today. I don't mind baby sitting the smoker but it would be nice...
Yeah Wagyu Beef is pricy but it absolutely has a 100% overall taste better than choice and so tender it melts in your mouth. That is why professional BBQers pretty much use that grade of meat and why they win hundreds of thousands in competitions.
Does anyone have one of these Flame boss controllers and how well do they work for a Chargriller?

Costco prime is a good deal the price reflects a much juicier and tender brisket. I would never buy select but choice is the usual if prime is not available.
Its a 10 year old chargriller that has never been cleaned except the grates and ash pan. After 10 years it's about due for a good cleaning and i figured on taking it to the car wash and using degreaser and hard spray followed by oven cleaner and then rinse thoroughly. Then I plan on scuffing the...
For Christmas I know I know thanksgiving is not over but I have to special order a prime prime rib from the butcher. Every year I ask the grocery store for a 5 bone prime rib only to go pick it up and find that it isn't. I have to explain that the so called prime rib is really not prime but...
I take a 50/50 kosher salt and pepper blend (whole pepper corns ground in a spice grinder) I spritz the brisket or ribs with water and apply the Dalmatian rub 2 days before the cook. I then wrap it and back in the fridge. 1 day before the cook I make up this rub and apply it then back in the...
Yeah every year we have a family gathering before Christmas and invariably I get chosen to cook the meat. Several years back I noticed that my BBQ sauce bottles came up missing and this continued every year. Of course I know who the culprit was because when finished with it they returned and...
You know I was tired and when I woke up and saw the remote maverick meat temp probe reading 106 I panicked and immediately took it off and put it in a hot box to rest for 3 hours (fell asleep). Normally I do exactly what you said and had the meat temp alarm set for 190 but never heard it go off...
First time this ever happened. I had a 13 pound prime cut brisket. Injected for my first time never injected before. Normally my brisket takes about 15 to 20 hours. Since I injected it I figured it would take longer. I started the cook at 5:30 pm for a noon meal the next day. I setup the...
