    Elk Fatties

OKAggie, in August I made some elk fatties. We took about one and a half pound of elk and mixed it with one pound of JD sausage. Mix well and flatten out on Pam spayed surface. Put in you favorite filling, roll up, and smoke to 160-165, let cool a little, slice, and enjoy. Came out real good...

Char-Griller Smokin Pro with firebox- Mods

My question is will the bricks on the firebox end allow for good heat and smoke movement or creat a problem with the air flow through the smoker, causing a bigger problem. When I put a tuning plate in smokinmeat's smoker, I used the bolt holes that hold the legs to mount a rail on each side for...

    Osage Orange...Hedge

I'm with Backlash, I have used it when needing heat. When cooking in cold weather I have used some to help keep the heat up. I also agree with Mike on not using it for a total smoke. Can't say that I have ever noticed any off flavors from using it. Used some dry cottonwood and a couple sticks of...

    ummmmm, canadian bacon.....

Smoked, those look great. I did one a few months ago to see if we would like it and it turned out great, but haven't had or taken time to do any more. The one I did didn't last long, as I cooked it completely, and after it cooled I sliced it and put it in the fridge. Every time the Mrs. or I...

For the wisest of the wise

Firstof all I need to welcome you to SMF. As for your temp problem, have you checked your therms with the boiling water or ice water methods?Factory therms have a habit of being way off as to actual temps. It is a good investment to buy a probe type digital thermometer or two to keep track of...

How did you come up with your screen name?

Well, here it is. In the 60's when CB radios were the thing, one of my buddies dubbed me Short One. Actually I am 6'5" tall and taller than all that I ran around with. When I registered on the forum, I typed in Shortone and entered it before I caught my mistake. Used to get razzed about where...

Cooking whole hogs in underground pit

Very nice post Cowgirl. One thing we did different when I helped with roasts of this kind was after raking the coals down, we would cover the coals with sand a couple three inches deep to kill the heat and let us place the meat in the pit easier. Just my .02 worth. Again this is a very...

    Buela is a hit

Searing a brisket is in the plans for our next campout with my old guard buddies. Beula usually ends up running for a good 12+hrs when we get together. Planning on 4 butts, a packer, some ribs, a loin or 2, pigcandy and of coarse some fatties on Oct 12th if everything works out.

    Buela is a hit

Mike, Buela has did a lot of pork this summer and things get pretty thick in the bottom if you don't use a pressure washer on the inside bottom of the barrel. Would rather be save than sorry.

    Buela is a hit

When son first called and wanted to know about smoking a whole hog, I asked if it was broke down and he said yes, 2 shoulders and 2 hams. Told him to have them cut into around 8 lb. roasts if he didn't want a 30 hr. cook. That got their attention. On at around 4:45 a.m. and off and in coolers...

    Buela is a hit

Pig, haven't had time to get started, too busy. He's going to use Beula, and work on his when harvest is over. Got a truck in the shop now with trany and clutch problems. Got to go to Omaha in a couple days to pick up new trany. Never a dull moment. When I get it out something else will probably...
