Just got my 1st Waygu brisket but it's a flat with no point :~( wth ? . It's already trimmed with little to no fat cap . The fat left on it it maybe 1/4 " thick . I am kinda upset but I plan on smoking it Friday night . Any suggestions or tricks to cooking a brisket this trimmed down ? I mean...
Plan for enough time to finish them . My last one took 17 hours to get to 200 degrees . If I was doing it I would time them to be done the morning of the serving . Mine was a 10.6 lb butt ( bone in ) .Be sure to Qview ! My rub and smoke was enough , no finishing sauce was needed nor used. Good Luck
After watching him cook just now , I know he most likely under cooked the burgers . He pulled them ( looking brown ) ( or done ) just now like he did the night before as a test . The outside is smoked looking but the temp of the burger was just a tad under 140 . The burger just was not done ...
Neighbor "a" told me him , his wife and daughter all got sick from cooking burgers on his smoker. I asked him if he cleaned the grates btw smokes? He told me no , that it wasn't an item due to him cooking at 275 degrees. I told him he was wrong and that grates if not used 24/7 should be cleaned...
