I am also building a UDS. I went with one 1" nipple and ball valve, and a 2" X 3' smoke stack. The way I looked at when building mine even though I haven't tested my theory and build yet, I looked at the way a wood stove operates.
They are reverse smokers. The smoke goes in from the fire box under a plate with a opening on the far side from the fire box. Then the smoke flows over the meat and back out where your smoke stack is.
You have a great plan already. Just food for thought if you where to install a variable 1 turn rheostat in place of your multi position switch you could get better control via fine tuning.
