Need feedback on WSM 18.5, 22.5, & Mini

I've had 8 butts and 8 beer can chickens in my 22.5", 6 on my 18.5", never tried more than 2 on my 14.5" or mini. Yes, the 22.5" burns more charcoal but in relation to the amount of food it's about even. Another nice thing about the 22.5" is that spare ribs will lie flat. It will come down to...

    Good-One Marshal or not???

I have a Good-One Rodeo and yes it will do everything you asked about. At smoking temps of 225° to 275° mine burns between 3.5 and 4# of charcoal per hour; YMMV. The dampers will close tight enough to snuff out the fire, however usually by the time I'm done cooking there is so little charcoal...

Blazin Grill Works, Yoder, or Cook Shack?

At that price point you're looking at the Coohshack PG 500; I have a PG 1000 which is essentially an insulated version of the same grill. Cookshack, by design, does not have even heating throughout the grill. It has 4 "zones" with the direct grilling area the hottest, then clockwise to the lower...

    GMG vs WSM

A WSM is a great SMOKER, I have 3 of them. Pellet grills are more convenient and versatile; one can smoke, or grill, or bake, or.... As has been mentioned, they are all tools. Sometimes I use what will work the best and sometimes I pick what I cook on just because I want to use it that day.

Looking into a pellet smoker, looking for opinions and advice

I have a Cookshack PG1000, GMG Davey Crockett and GMG Daniel Boone, my son has a Traeger Texas. Your budget rules out the Cookshack and Yoder models, and I see 2 distinct advantages of the GMG over the Traeger: My DB came with the grease tray with holes in it for "direct" heat, the Traeger has a...

Question on Fast Eddy by Danson

My understanding: they were initially made by Danson (Canada) because of the Traeger patent and resulting manufacturing restrictions. Once the patent expired production was moved to Cookshack.

Smoking different meats and seasonings at the same time

First: put your poultry on the bottom as you don't want that dripping on the other meats. You will get some seasoning dripping down and there is a debate over which is better; beef dripping on pork or pork dripping on beef. As far as the water pan goes, I don't think you will notice any change...

    Green Mountain Davey Crocket Smoker

I use mostly Cookshack hickory pellets in mine. It's a neat little smoker! I've done everything from grilling to a 13# turkey.

    First try at breakfast sausage

As we get ready for competition season to begin again I finally had some rib trimmings to play with. I added 1/2 Tblsp of Cookshack Chicken Rub to the recipe and it turned out great!

New WSM any additional equipment needed?

I have both. The 22 is nice for packer briskets and ribs because of the size, however they can be done on the 18.  I have done 6 8# butts on the 18, it wasn't ideal but it can be done.  Personally I would use the WSM as it comes a few times to get used to it, then decide what extras you...

    Cabela's grinder/stuffer

Not long ago I bought a #8 1/2hp Cabela's grinder and it works great. This past weekend I tried it as a stuffer. Now I know what you all say, but I had to try it. I was stuffing ground meat into 19mm collagen casings using the smaller tube and the speed auger. It does work. It took a while to...

    Pit Boss at Menards

Traeger quality? Danson used to make grills for Fast Eddy Maurin before Cookshack started making them. I haven't seen the Menards grill but the Danson's I've seen looked like good quality.

Thinking about getting my first smoker!

For smoking AND grilling on a tight budget the Weber kettle can't be beat. For smoking, the WSM is the way to go. It's not uncommon to find a 18" WSM on Craigslist for $150 or so

    Competition cooking question

I usually aim for the brisket and butt to be done around 3 hours prior to turn in. This gives some leeway for that hunk of meat that just doesn't want to get done. The biggest thing will be to set up in your drive way and do a practice run. Make a list of everything you use so you'll have what...

    Charcoal vrs. Pellet smokers

Charcoal actually, I did have a stickburner but sold it due to lack of capacity. Pellets smolder more at lower temps and burn very efficiently at high temps. Also the brand and flavor of pellets will make a big difference. We use Cookshack's hickory pellets and are happy with the flavor. It...
