    I will def rinse/dry....i brined a turkey breast once that was just gross due to so much salt.  Also going to cut down to half, if not remove, all of the salt from the brine mix. I'm thinking for the brine: 2 gal water 1 gal apple juice Thyme, rosemary, sage, pepper, peach zest 1/4-1/2c...

    Oh ya...no doubt.  We're basically talking about a 6-butt pulled/6 whole pulled chicken (roughly) thing to start with...both are popular in the places I've visited.  I've been seeing trailer-towed smokers around the $1200-$2k mark.  One of those should suffice for a while.  I don't see myself...

    Chicken Leg Racks - Tried Out 2 Different Styles

    That's what I do.  I always do 50/50 "hot & not."  I have a bowl that I've used to toss wings, etc that I usually have filled with my "mop" sauce.  I'll pull them off the rack, dip em, and quickly put it back on there.     Beef Short Ribs w/ Q-view

    Aaaannndddd.....done.  They were yummy, too.  The dogs are also very happy with the bones.  Trying to see a mini-dachshund try to eat one is almost comical.  Probably hard to tell by the pic...but they were very juicy.  A little more done that I prefer, but all-in-all...very happy w/ the outcome
