    Does anybody have ideas on how to smoke cheese year round with hot weather? Ways to smoke indoors or in a garage? (air conditioned)

    10.5 hr pic update. Smoker stayed steady over night it seems (my alarms didnt go off on my Maverick). Woke up a few times and it was running 240-250 so I was happy with that. Added a bit more charcoal so it can finish out. IT is at 180* after 10.5 hrs and the smoker is comin back up to temp...
