March '23 Throwdown: Gone But Not Forgotten (Edited)

I'd love to do this, but it's still wintering here, and I'm off to New Jersey for work for at least a week. For those of you who are new, or somewhat new, and looking for that winning entry, all of chefjimmyj's recipes seem to be in one place. I don't know if he, or someone else did this, but...

Smoked Cheese Stuffed Bourbon Glazed Meatloaf (Heavy Pics)

Looks great, with no cheese oozing prior to plating. I notice you got that "cheap bourbon" shot in there twice. I'm guessing the TN folks will be along shortly.

    I am terrified

So don't put anything on your first few times. Grab a box of beer, start a fire, and keep good track of how it behaves. Think of it as breaking in a wood stove, if you've ever done that. Great advice above. The only two things I would add: let all that steel get up to temp before adding...

    BBQ'ed Hippopotamus Anyone???

Let me see if I've got this right. We're going to load hippos in boxes, without tranquilizers. Then we're going to load them in planes, BUT, we're going to have people onboard to tranquilize as needed. At what point does that happen? It must be after the animal is out of the box. Do we wait...

    European Market

Bill, is this from the Regional Market by the ballpark, or another market?

    Daytona 500

Gonna put the race on the radio, sit in the sugar shack (Mother Nature's really confused this year), and sip on something from Tennessee. Then, just before The Big One, the half hour caution, and the green/white checker finish, we'll do up some shaved beef fajitas which have been marinating in...

    Cider

Another project associated with this is making one's own vinegar. This is THE best vinegar for Cornell chicken sauce. (See Pops' posts on this.) It's not what you're after if making cider, but is a byproduct of your buddies drawing pitchers off the barrel and introducing air. (One reason we...

    Cider

Cowboy, the book we used, and still do if we want a refresher, is by Annie Proulx. Don't recall the exact title, but it's certainly got the word "Cider" in it. The whole process is fun, and just like smoking, you can get by with a minimum of equipment, or have a gadget for everything. As...

    Cider

We use the sweet cider the local orchard presses, but we're in and out the back door, as they're not supposed to sell unpasteurized. We'll do some with just natural yeast, but more often than not kill that off and use champagne or other dried yeast. (The old timers snubbed there noses and...

    Cider

Yep. Not like we used to when everyone's kids were little, and picking and pressing was a fun-filled weekend, but we still make it. Just get carboys filled these days. (On a smoking related note, it's great in a spritz, with a bottle or two reserved).

Red's 24x46 Reverse Flow Patio Build

Looks good. Tell us about the Bauer tool. Doesn't look like a sandpaper head. It looks like a biscuit jointer with some sort of steel wool attachment. Seems to have done its job.

    Vegetarian Recipes

The thread title is "vegetarian recipe". The smart ass in me is disappointed in the responses... Go with the frittata, or some creative smoked portabellas. We do ours with a balsamic splash and piled with whatever you choose, though I guess sausage is out.

    Arby's Horsey Sauce

The 3 pepper sauce is commercially available. You just need a small conscience and a large purse. It's in the little squeeze tubes in these parts!

    Arby's Horsey Sauce

Arby's horsey sauce is a food group unto itself, much as butter is. I understand Arby's also sells items you can use as a vehicle for the horsey sauce, but straight out of the squeezed paper tub always works for me.

    DIY kitchen remodel tips wanted

Just one bit of advice.....don't tear those cabinets out until you've laid eyes on the new ones and inventoried them twice, or even three times!

what wood do you use to smoke?

Freewood is my favorite species. Fortunately, that's been cherry, maple and apple the last few years. The apple's plentiful as the old orchards die off around here, but it takes longer to properly dry.

    Deer roast ideas

Low and slow on the smoker for me. Rubbed with a pepper and coffee rub, the name of which I can't recall...."Major Merritt's", or something like that. Oh, and the obligatory garlic cloves inserted.
