    Check out a China Box Pig Roaster, its basically a plywood box lined with SS, and on wheels, you put the hog on the rack, close the lid, and cover the lid with charcoal... we have one that we use every year for the last 5 or 6 years.

    What group should I use?

    A lot of guys on here have had smoke houses with a similar size and reach temps of 250 degrees with the 1500 watt dual burner hot plates, a lot depends on the insulation of the CC and how long of a cord you use for the hot plate.
