    venison question?

    My family is wanting me to smoke a couple of deer hindquarters for Thanksgiving.  One is going to be on the bone and the other is going to be cut off into roasts. Any suggestions?  Should I pull them off the smoker when it reaches 150 internal?

    Venison Summer Sausage

    Looks good, I am getting ready to attempt some Jalapeno/cheese summer sausage out of a deer I got. About how much pork to deer would you suggest using? I am going to use 1lb of cheese to 10lbs of meat and mix a cup of peppers into that.

    My name is Ronnie and I live near Lake Tenkiller in Oklahoma.  I have been cooking and smoking for many years, just for friends and family.  I have smoked, wild hogs, goat, briskets, and babyback ribs.  I have a homemade smoker I designed and had a friend help me weld it up.  Glad to find this site.
