Evening jjchef. I'm using a digital probe stuck in a potato to measure the temp. I made all the mods you spoke of, just not permanent. Since I don't know the first thing about welding I was bidding my time getting a good charcoal basket and tuning plates. Right now I have an old cookie sheet...
Eric, thanks for the help. I'll move the smoker so the firebox isn't into the wind. The charcoal basket is elevated and when I look through the vent there is still room between it and the ash. I tried using a cheaper method for the basket but I guess it didn't work. I'll have to get some...
Checked the vent and it's not clogged. Tried the minion starting out but charcoal burned too quick. Now I'm stuck with a dying fire. I've added two more chimneys full of charcoal and it just won't go above 210. My question is, will the ribs be ok if they're cooked at 200 as opposed to 225? I'm...
This is the second time I've smoked so I'm new to this. I'm almost two hours into my smoke of beef ribs and I can't seem to keep the temp up where it needs to be. I'm running a Brinkmann pitmaster offset smoker, its a bit windy and right now, we're looking at an outside temp of 68. I have the...
@jrod...Thanks for the advice. I was thinking along those same lines. I used an oven liner and found that when you cut the sides to fit inside the smoker it gets pretty "wobbly." I'll have to rethink the design, maybe find someone who welds that would be willing to fabricate something for me.
@Dutch...I posted my first smoke in the poultry section. I ended up smoking a 12 pound turkey, a small pork loin and some corn. The corn wasn't quite what I expected (have to do some more experimenting with that) but the turkey and loin came out amazing. Here's the link...
@husker...Thanks. I am still curious as to why I went through an entire 20 pound bag of charcoal.
The pork loin in the picture turned out amazing as well. Had that on Saturday when my dad came down to visit. I used a rub I was given so I can't take credit for the flavor, though. I'll have...
As far as I know, the smoker is not reverse flow.
These are the mods I made.

There was a foil pan under the turkey to catch the drippings. It was set directly on top of the tuning plate (old sheet tray with...
Hey all, I was finally able to get the time to do my first smoke after refurbishing an old Brinkmann I bought on craigslist. We had a turkey in the freezer that was earmarked for the smoker's maiden voyage when I bought it. I brined it using the recipe from good eats with orange juice...
