    At least for me finding 3" aluminum elbows locally was a bit of a challenge. I ended up ordering them online and should be putting together my mailbox mod for my mes 30 on Friday.

    Is it possible to do the MES mailbox mod without removing chip tray assembly?

    Did this work out for you?  Im contemplating the mailbox mod for my mes but i would like to keep the chip assembly in tact as well since i use a tile over the assembly to even out the temps.  If i remove the assembly i will have nothing for the tile to rest on above the element.

    Treated my wife and I today to some dino bones.  Picked up a 4 bone rack of beef chuck shortribs at ShopRite yesterday, a little over 3.5 lbs.  Rubbed with spicy montreal steak seasoning overnight.  Brushed on a light coating of evoo and some regular montreal  seasoning this am before heading to...

    How do you determine creosote vs "seasoning?"  To me that looks like "seasoning" that builds up on everybodys grill or smoker.

    Agreed.  I have never mopped or placed a drop of water in my mes 30 water pan from day one.
