Just from looking at the pics your firebox looks to small and the opening to the cook chamber is to small. You really should use the calculator to get correct numbers. What size tank and firebox are you using?

Ditto on the wood stove door gasket, provides a good leak free seal. But don't weld your hinges till you have it in there for proper spacing. I put a big chunk of steel on the door to weigh it down then tacked the hinges on. Remove the gasket before finish welding. I would do all of that...
I guess you just here 225 so much that it sticks in your head. But I'd like to be able to do jerky which needs a lower temp. If I can't keep it lower I'll just have to build another smoker lol.

Made pulled pork and ABT'S today. Pork took just over 9 hours to hit temp. Used oak and apple. Was my first time doing pulled pork, and first marathon smoke. Pork was juicy and flavorful.
