    120 gallon RF trailer build

I'm building it for a friend and as far as I know he's going to powder coat it. Still a long ways till then. Once I get it out I have to reinforce the trailer and put diamond plate on it. Kyle

    120 gallon RF trailer build

Been a while since an update. I've done a few small things recently. Put eyelids over the temp gauges, and built an angle iron stand for the cooker to sit on. It's pretty much done at this point except cleaning up weld spatter. Still need to figure out how I'm moving it out of my shop. And...

    Smoked turkey

I do chickens and turkey at 275-300 so the skin will be crispy. Took just under 4 hours. I used peach wood this time I usually use cherry for turkey. I like the peach though it's very mild but good flavor. I've never heard of bean and cheese tamales. I'll have to try that. Actually ended...

    Smoked turkey

Added some potatoes, tomatillos, Anaheim chilis, pasilla chilis, jalapeños, and an onion. The onion chilis and tomatillos will be the salsa for tamales. Turkey came out really good. I also threw 2 eggs in the smoker because I've been wanting to try smoked eggs and they did not disappoint. I...

    Smoked turkey

Every year the week after New Years turkeys and hams go on sale. This year I got 2 18 pound turkeys for 10 bucks. Smoking one today and making tamales with the leftovers tomorrow. Kyle

    Cajun Custom Cookers

Building them commercially welding every seam twice is taking double the time, using double the gas, and double the consumables. The time it takes to prep a seam for MIG or stick couldn't possibly be more cost effective than what they are doing. I'm with you on TIG, I'd love to do nothing but...

    Cajun Custom Cookers

If your seam is properly prepped you will have penetration through to the backside. There's no reason to weld both sides of a seam except poor preparation or lack of welding knowledge. I'am by no means an expert but never have I seen a professional welder weld both sides of a corner joint, or...

    Cajun Custom Cookers

Sounds pretty gimicky to me. And what do they mean by double welded? Did they weld each side of every seam? That's just bad welding practice if that's what it's supposed to mean. I've never heard that phrase before. In a properly designed smoker the heat will be pretty close on either end...

First smoker build reverse flow any suggestions????

Just a thought you could use rectangle or square tube for those vents. Once the hole is cut in firebox mark the tube and cut the inside off, that would leave you with a nice flat surface to build your vents into. Would save a lot of welding doing it that way rather than using all plate. Kyle

First smoker build reverse flow any suggestions????

I have an ET-73 as well. Never had any issues with it. I also have an ET-732 which isn't much different just has a farther range. They are simple to operate that's what I like about them. To many bells and whistles aren't needed. Kyle
