    Water bath sticks question

    Iake casing less snack sticks. As of yet I have not giving them a water bath after smoking them. If I do give them a water bath will they soak up water being as they don't have casings on them?

    Cure and rest time?

    I believe the overnight rest helps the cure do its thing. But being as it is ground meat the cure is able to get to all areas in the meat quickly so it needs a shorter rest or even put in the smoker almost right after mixing. Wait for someone to second that before you go smoking just to be sure.

    The regulator on the hose has a knob for adjustment. Same as a needle valve?? I will get a flame out switch. Thank you!

    I put aluminum foil in-between the wood and the tube. Wonder if that's enough.

    A few pics of my new plywood smoker. Seven racks made out of plain steel expanded metal with 1/4 inch rod around the edges. All done view from front. Inside Using a turkey fryer burner. But have to get a new hose that doesn't have a timer on it. Not sure if my Amazen smoke tube will work there...

    Had a 2# pork roast in the crock pot on low for five hours. Had to unplug it and put it in the fridge. Don't know what the internal temp got to. Is it still safe to eat? Thanks.

    Seems like all I make is....

    That's strange, I just searched Nepas hot stick recipe, then tapped on Hot stick recipe. This is how I make caseingless snack sticks. The stuffer is blocked up with half inch plywood on the sides. Then I extrude onto a strip of freezer paper that is a little longer than my smoker racks. I slip...

    smoker insulator

    My smoker has an inch of insulation in the walls so it may not get as hot on the outside as some smokers so I just wrap it in a couple old blankets.
