I have done quite a few hole birds in the past but they are usually under 20lbs. I have never done a brine, typically I inject and wrap in bacon before the smoke. Someday I am going to do a brine but that will wait to do that on one of my own. I hate experimenting on someone...
I agreed to smoke a turkey for a small graduation this weekend. Found out last night that they are bringing me a 26.5lbs bird! So the first thing i did was jump on here figuring someone had smoked a bird that big and would have some pointers.
So how did your turkey go and do you have any tips?
TXSean - Thank you. I am really hoping to be able to get both of these to work the way they are supposed to. at this point i don't think it fair to compare them as they both have issues that need tweaked. I will post as the process and modifications progress.

So I finally was able to put together a full smoke. I smoked 90lbs of pork butt for my church's spring BBQ this past weekend.
I found that the inline was fairly constant throughout the cook and the RF fluctuated quite a bit for the first couple of hours. I think a longer preheat...

Make sure you show pictures of the aftermath which ever way you go.
