For hot smoking at 225 temperatures or so you can get good results with the upgraded wood tray as well as with the original small wood tray. You just need to learn (1) how many chips is enough (but not too much) to put in the chip tray and (2) how often to refill the chip tray.

An AMNPS and MES make a great combination. It is what I have and use. However, the chip tray on the MES works OK too to get TBS and without fire, if you use it correctly. Don't know why you got fire, but perhaps you put too many chips in the tray at one time or had the feeder or chip tray ajar...
Time estimates are good for general planning, but for most meats you should use a thermometer to determine when things are done (based upon internal meat temperatures). Ribs are one exception, where the 'bend" and "pull back" tests are more reliable.

I use either sawdust or pellets in the AMNPS. Both work fine. You can not use both at the same time. Do a search on AMNPS and MES40 and you will get lots of good information and pics. Better than I could put in my reply. Good luck on whatever your choice of smoker is.
I am not a Bradley/Jim Beam smoker user but I understand one of the main attractions of the Bradley is that the puck feeder makes it possible to do long smokes without needing to refill a chip tray every 30-45minues. The negative is that the pucks can be a bit expensive compared to alternatives...

I guess so. My small chip tray worked just fine after removing the extra piece of metal. If there is another design verson of the "small" chip tray that does NOT have the extra piece of metal but instead a different design deficiencey, that might explain the determination of many to replace it...
To be clear, your smoker is not really an "MES30" as it is usually referred to on this forum. The MES30 (and it's big brother MES40) are the electric digital version of Masterbuilt smoker . You have the analog version which is a completely different smoker design.
