    Smoke generating problems

I had problems keeping my AMNPS lit when I was using a butane torch to light it. I switched to using a propane torch to make it easier. One tip is to blast the pellets with the propane flame really really well until you think they are properly lit. After you think the pellets are properly...

Bad Q, ummm it doesn't have that taste!

There are many users here having great success with the AMNPS using a water pan and without using an external enclosure. I am sure that you will be one of them soon too if you play around with your technique some more following the advice you will find on this fourum. I had some problems at...

    MES 40

While a very good question, this is like asking whether a charcoal grill works better than a gas grill for steaks and burgers. Many would acknowlege that a charcoal grill provides better results and some would insist on using only a charcoal grill. However, others would decide that the...

    Masterbuilt Smoker and Peterson Pucks

The AMNPS is also a popular smoke generator for the MES setup. I am curious as to running costs of using Peterson pucks  (e.g., cost per hour, total cost for an 8hr smoke, etc.) and how that would compare with using pellets in an AMNPS.

    MES 40 Stalling Problem

The physics of heat transfer and stall are pretty much dictated by nature. If the stall is lasting longer than you think appropriate, I think the only two possbile explanations are either (1) the actual smoker box temp is lower than what you think it is or (2) your expectation of the time a...

    Water pan in a MES?

I have read that putting cold meat inside a smoking smoker can cause creosote to form/condense on the surface of the meat. Also, thick white smoke can cause creosote to form/condense on the surface of the meat. I have never done either of these myself (don't want creosote on my meat) so I can...

    Propane vs electric dilemma

My previous smoker was propane bullet type smoker and I found I didn't use it much because I needed to be around for the whole smoke to make sure the temp did not get out of range. Wind, sun, and other changing factors required me to periodically tweak the analog gas controller to keep the temps...

    30" or 40" mes

Another big benefit I found in the MES40 over the MES30 is that there are more choices on where to place the AMNPS. I place the AMNPS on the center of the bottom shelf inside a bake pan (with holes drilled on the sides of the pan for air). The AMNPS burns nicely in this location and I can...

GOING TO CABELAS TOMORROW MES 40 2012

I have the good looking all stainless steel MES40 too and I feel the same way about keeping it 'forever' , even if I have to fix/replace parts/mod to keep it going. Whenever I am on my deck looking out at my MES sitting there, I think to myself what a nice looking smoker it is...

BBB - What is best smoker temp and internal temp to get result closest to regular bacon?

Chefrob, I will follow your advice the next time it make BBB. The way I was making BBB before was a lot different and explains the reason my BBB was turning out the way it was. The pictures also helped me see how to best prepare/cut up the butt for smoking. I look forward to seeing the...

BBB - What is best smoker temp and internal temp to get result closest to regular bacon?

What is the recommended smoker temp and internal temp for BBB if  you want it to turn out as much like regular 'belly' bacon as possible? More specifically, I want to be able to fry it up crispy like regular bacon.  I understand that BBB will never turn out exactly like belly bacon, but I am...

    Problems coming?

This is typical for the model smoker you have.  There is no gasket between the metal box and the metal door and the fabrication of the box and door are not so exact as to provide a tight seal in most cases. One mod I have seen on this forum is to attach a gasket to the box or the door to provide...

Thanks for the reply. I am looking forward to trying this myself now.

    Electronic Smoker Advice/Questions

To some, there is a difference in the result when using a charcoal vs. an electric smoker. Kind of like when some see a difference in result when using a charcoal grill vs. a gas grill. IMO gas grills are more popular than charcoal grills because of their greater convenience, which overshadows...

    Corned beef on the MES30

A few more questions on the details of your smoke. I'd like to duplicate your excellent results. Thanks. - What type wood did you use for the smoke? - Did you use a water pan? - What was the smoker temperature? - What was the meat's internal temperature when you took it out of the smoker? -...

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

There must have been multiple "all stainless" MES40 models sold by Cabela's in the past. I got mine at Cabela's in 2011 and the tag on the back of the unit shows that the model  number is 20070710. I doubt that this matters to anyone but I just thought I would clarify this.

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

The Cabela's model has an all stainless steel exterior while the Sam's model has only a stainless steel door with the rest of the exterior black (don't know if it is painted black or if it is a black metal).  This probably explains part of the price difference. I got the Cablela's model because...

MES 40 (I think - from Sam's last fall) with Electronics and Remote - Temp Question

I think that when the controller is first turned on and the timer button is pressed, the display flashes 24 hrs as a starting time. Tap the " - " button a few times and your will have 23+ hours on the timer. That gives your plenty of time.

    MES 40 Newbie fail

I use a 25 foot 12 gauge extension cord without any problem. That is, the element gets hot enough to maintain the temperatures inside the smoker based upon the controller setting. I do use a separate thermometer (Maverick ET-732)  to montitor the temps inside the box and set the desired temp on...
