Is that "metal duct joint " attached to the MES or is it just sitting on top? If it is attached, how was it attached? I am thinking of doing the same thing.
I am no expert on the Amazen, but I have not had any problem with it going out using a water pan in my MES40. I have read of problems when the chip feeder is closed (causing the box to be starved of air) or when the Amazen is placed over the water pan. Anyway, I just thought I would mention it...
How does one add a chimney on the MES40 so that it works the best? Do you loosley place a short piece of pipe on the vent opening on top? And if so, what type of pipe, what diameter, and what length of pipe works best?

There are a lot of happy MES30 users on this forum, but I got the all stainless steel MES40 with window because it was so darn good looking. I really did not need the extra capacity of the MES40, but I knew I would enjoy seeing the bigger shiny smoker sitting out on my deck more.
Yes, most will agree that a digital probe is much better. One big benefit of the digital probe I find is that you can place it anywhere you want inside the box, such as towards the middle where the meat is, rather than along the side or back wall where the temps can be much different.
When using my 6x8 AMNS with dust for hot smoking , I fold some aluminum foil over the interior walls to help prevent jumping between rows. It seems to work fine and it does not keep the dust from burning OK within each row. I still have lots of dust on hand, but when I run out I think I will try...
The temp dislay on my MES40 typically shows 10 - 20 degrees hotter than the "actual" inside temperature (as measured with a Maverik ET-73). I would prefer it was wrong the other direction so I could smoke/bake at higher temperatures, but I live with it as it is by setting the controller 10-20...

Spraying the racks with vegetable oil before use makes clean-up a lot easier too. Maybe most everyone already knows this and does this, but I thought I would mention it anyway.
I have had good luck by spraying the grates with cooking oil before placing the meat on the grates and then cleaning the grates in the dishwasher afterwards. They come out pretty clean. You can get the cooking oil spray cans at most grocery stores.
I use the AMNS for most of my smoking, but it is nice to have a functional chip tray too. I had a similar problem with my MES40 and did the below linked mod to the small chip tray assemply to fix it. I am not sure that this fix would also apply to your MES30, but it something you can research...
I also use the AMNS for smoking in my MES40. It is a great device for doing long smokes especially. However, I do find that it may take a little while for the AMNS to generate smoke at its full potential when first lit, so I usually add 1 or 2 loads of chips to the wood tray when I first start...
From what I have seen looking at a Cajun in a local store, the wood chip feeder setup on the Cajun is a bit different than on the MES. On the Cajun, there is a chute on the side for feeding/sliding the chips in to the wood tray. I can't say if this is better or worse than the chip feeder method...
