Smoke essentially attaches to the surface of meat. It doesn’t really penetrate anything.

Some are more complicated than others. I’m not familiar with the pellet smokers that use P settings. Mine just has a temp range setting between Lo to Full. Keep the lid closed and push the power button. Then set the temp. Put the meat on when it reaches the set temp.

I don't have a Z Grill, I have a different brand. Pellets are basically irrelevant unless they are damp. I've burned many different brands and wood types with no issues including lots of Lumberjack. The controller should adjust the fan and auger for whatever is burning in the fire pot.
I taste maybe a slight hint of charcoal using the LJ Char/Hickory blend. They are overrated IMO. I prefer the 100% hickory but give them a try for yourself. Everyone has different tastes.
My advice would be to return it. Pellets smokers are supposed to make things easier. I turn mine on (not a Pit Boss) and set the temp and it stays there. No smoke settings, no preheating, no flameouts and no fires. Not trying to rag on Pit Boss but geez why so complicated?
