    Will start at 100 degrees for 2 hours, then 130 for 2 hours, then 140 for 2 hours.

     Planning to serve cold tomorrow as appetizer..... IN MES 40.... Brines in solution of water, salt, brown sugar, worchestershire, hot sauce for 12 hours. Removed from brine and let it sit in fridge for 3 hours. In smoker with A-MAZE_N Maple at 100 degrees.

    I used Itailian for my first one and while it was OK, I used too much. Stick to a pound of whatever you use.

    I live in Bethlehem. Peeps are manufactured about 2 miles from my house. Someone said some things are better left alone. Peeps is one of them. Made by the "Just Born" company. Great jelly beans too.

    Bought some loose italian saisage patties from Sams. Used 5. Maybe I used too much. Tat's my thought. if they were 1/4 pound each, a pounds and a quarter. I'll try another one.

    I usually pre-cook things a bit. Never did one of these but yes, I will roll out sausage thinner and cook items I add maybe half way.
