    I live in Pennsylvania and brisket here runs, unfortunately a whopping $4.59 a lb!!!    My buddy, who lives in the great state of Texas, told me that brisket is $1.77 a lb there...uhmm My question, does anyone know of a way to ship meat from Tx to Pa? I've smoked a handful of briskets here...

    I kno of a guy who would smoke his product then freeze it until the event then just bring it back up to temp day of. I'm excited for you and hope it works out. I want to do the same thing but lack a big enough smoker to do the events. Best of luck to you KS13.

    The meat was definitely tough and not bending much coming out of the wrap. Heck maybe I got a little too anxious and excited about tasting it That I forgot about that thing called PATIENCE you fine people mentioned above The key ingredient. Either way I now know what to improve on next time...

    final product :) the taste was a perfect mixture of sweetness with a mildly spice aftertaste. The only negative was that the meat was tough. Rain all but smothered my pit. I covered the best I could but the temp was up and down. I'm guessing if I can keep it steady at 225 to 250, 5 hours 2-2-1...
