    Remove membrane on ribs Olive oil them. Rub them (I used my homemade rub here) 3 hours on Smoke (Traeger settting) Wrap in foil, adding nothing, 2 hours Unwrap, adding nothing, 1 hour (or so) Let sit a few to cool Very tasty "Carolina" style non-sauced ribs.

    Coated with Montreal Steak Turned the Traeger on High Seared (or attempted to without grill grates) for 7 min. Flipped and went another 7. Continued until about 30 minutes (if I recall) until I reached our ideal medium-rare temp, then took them off. Excellent taste.

Olive oil and McCormick Brown Sugar Bourbon rub, then a layer of brown sugar, then a bit more rub, then wrapped in plastic wrap and refrigerated until the next am.     Favorite Pellethead wood fuel

    I have yet to get "too much" smoke from food cooked on my pellet cooker. Even using 100% hickory pellets I didn't think the flavor was overpowering. I actually want more smoke flavor!

    Traeger Temp control

    On my Lil Tex Elite, the smoke setting did keep a pretty low temp, about 180ish or so if I recall. I'm not sure what medium equates to temp wise on the digital controller (what I have), but it may be about right at 275ish. Just some feedback from a post-Traeger owner.
