    Lingo

Yes, spritz is a spray, also called a mop sauce, its used to add flavor and keep meat moist. UDS is Ugly Drum Smoker or Upright Drum Smoker (for those of us that don't consider ours to be ugly!). Its a homemade cooker that is usually made from a 55 gallon drum. These links will probably help...

    traeger fails.

The auger will bring new pellets to the fire pot to keep the fire going. All the hot rod does is start the original fire. I love my pellet grills, but I think if I had to do it over, I would have bought a Weber Smokey Mountain or a Big Green Egg. The next smoker I get will defiantly be a stick...

    traeger fails.

The hot rod is very easy to replace, but technically you don't need it. You can light the pellets in the fire pot with a torch, then turn on the grill, it works just fine, I've done this a few times.

    traeger fails.

Susie both Traegers that I have owned were made overseas, I believe. It was years before I had to replace any parts. $400 for a piece of equipment that doesn't work as advertised is ridiculous. If I were you I would be very upset as well.  If I might offer a suggestion, I would look locally...

    traeger fails.

Wow, I'm sorry about the problems you are having these problems, but I must say I'm on my 2nd Traeger , and I've never had any problems other than replacing the hot rods. The problem you are describing should definitely be covered by warranty!  I keep hearing these stories of bad customer...

Can you Brine and Inject a turkey?

I don't think I would mess with the brine since you've had success with it before. I think I would just add the Cajun seasoning 1tsp at a time, stir it up and taste it, and if it doesn't taste too salty after you get it all in there it should be fine. My guess is it will probably be ok, but its...

Can you Brine and Inject a turkey?

Yes, you can do both, just make sure there isn't to much salt in the injection from the Cajun seasoning. By injecting and brining its easy to get too much salt! Other than that, it should work fine. I have done both before, in my experience both aren't necessary, One or the other is sufficient...

    Stew Meat?

    Stew Meat?

Shepard's pie sounds like a plan to me! Is it still called a Shepard's pie if you use beef? Cowboy's Pie?

    Stew Meat?

Yes, I've done this. I had the same idea as you on the burnt ends! The problem is that by the time the pieces get tender they are bone dry!  They sure are tasty though. I should mention however, the stew meat came calves we raised on our farm. They were probably a lot leaner than what you find...

    Florida style mustard sauce

I've never been to those places but this one is pretty darn good! http://www.smokingmeatforums.com/t/51920/soflaquers-carolina-mustard-sauce

    Short Ribs

Those front ribs as Dave suggested are money. Its not all the ribs on a calf, probably just 20% of them that are extremely fatty. I just think maybe you got some of the really fatty ones. Every animal is different!

    Ash trees

Yes, ash wood burns fast, and has a light but distinctive flavor. Its great with fish or red meat. Happy smoking!

    Short Ribs

Welcome to SMF! I'm in the business of raising and selling beef. It seems like once you get a calf big enough to have good marbling in the steaks, a lot of the short ribs are almost too fatty to eat. It doesn't really matter what you do that fat just won't render. So my guess is that it was the...

    Silver Back

Take a butter knife and work it under the silver skin, preferably on the corner, but sometimes its easier to go on top of a bone.  After you have loosened some of the skin, grab it with a paper towel and it should come off in one big piece. Some racks are easier than others! You can also smoke...

    Pellet Fired UDS Build

Thanks, I imagine it wouldn't be too hard to rig a charcoal basket on top of the pellet auger, that's actually a really good idea, I think I'm gonna look into that. I was worried about the hole where the auger goes in, its a little bigger than it needs to be. I didn't seal it, but I may add...

    Pellet Fired UDS Build

The pork was very good, smoke flavor was there, but subtle. I think that is to be expected with pellet grills though. Traeger pellets seem to be fickle, sometimes I get pretty decent smoke flavor with them and sometimes its practically non existent. I think I'm gonna switch to BBQr's Delight or...

    Pellet Fired UDS Build

The aquarium pump sounds like a good idea. I went to a lot of trouble making sure I bought all stainless steel nuts and bolts, but I never even thought about the pipe being galvanized. I will defiantly replace it. Thanks!

    Pellet Fired UDS Build

Hey Pork Dork, I've been having trouble keeping the AMNPS lit while the pellet hopper is running, probably because of the fan. I did not take that into consideration. It works fine for cold smokes though. I hope to do some cheese soon!
