New to SMF with a new build

Hello Lou, welcome to the forum! Sounds like your build is very similar to the one I just completed, 120G propane tank. 1) on my build, my stack comes down about 3" into the cook chamber. Some go lower, it's a personal preference thing. 2) I used the Feldon's calculator, it takes out the...

    Help! RF creosote dripping!

While I agree that high humidity is a challenge, I live in Florida and high humidity is a daily fact of life. Every time I cook, I am dealing with high humidity. :o) By any chance, are you running a boiler pan in your setup? I usually do, unless doing a full load of meats (grates stocked...

Starting my 1st reverse flow smoker trailer

Looking great so far. I just built a 120g myself, had the same question about the stack. I ended up putting the FB and the chimney on same end. Good luck with your build. My project took about 5 weeks, so if you worked on yours as much as I did, you should be about half way through. :o)

My first reverse flow trailer build

Nice work, i kept looking for an image with one of those huge cranes to lift that thing onto the trailer. It looks like a HUGE BEAST! Congrats on the work, your metal work skills are a lot better than mine. :o)

    Short/Fat 120 Gallon Build

So, my mouth is STILL watering from the bacon discussion from 2 weeks ago......awesome looking build. Your attention to detail makes me look like a 1st grader with crayons in comparison to my 120g wide smoker. lol Keep up the good work!

    first rf build

Welcome to the forum! I just did my first 120G propane tank RF build, took me 5 weeks to complete it. Door cuts seem to be the most problematic issue for people, luckily, I did not run into this issue. I cut my door in stages to prevent warp. I used a thin cut wheel on a grinder, cut the...

Brinkmann Smoke N Pit low temps, too much charcoal

Sorry for the long delay, but here's a couple pics of my charcoal rig.  I put in a steel plate, hoping to force some of the heat to the opposite side. I didn't want to cover the whole thing with extra metal that I either didn't need or desire to clean every time I used it, so I only put in the...

Brinkmann Smoke N Pit low temps, too much charcoal

One thing I forgot to mention is that I use wood in my fire box.  Some people use large chunks of dry wood, but to be honest I soak my water for at least an hour before putting it in my firebox.  I do not throw them directly on top of the coals, I put them around the outside of my basket so...

Brinkmann Smoke N Pit low temps, too much charcoal

I'm very glad I found this post, I have the same Brinkmann SnP that you're having issues with, and I'm experiencing the same issues with low temp. Let me start by saying I've had a Brinkmann electric smoker for almost 10 years and was completely stuck on buying a Brinkmann unit when I went...

My Brinkmann Grill and Smoke Pit Mods

Mods look darn good, but the meat looks MUCH BETTER!   I have the same unit that I bought really cheap on Craig's List. I have a bunch of floor tiles leftover from a remodel I did here at the house and found your post to be quite interesting because I was thinking about experimenting with...

    Beginner

I think this is where I lack the expertise and am not afraid to admit it.  I own an electric smoker, but when mine puked, I borrowed a smaller trailer smoker from a neighbor to smoke the 3 racks I had prepped.  I simply didn't want them to go to waste.  With him coaching me over my shoulder, I...

Bruno, Good point on the thermometer, I didn't think of that.  All too easy to trust a factory thermometer when it's right there in your face.... I guess having a secondary one just to ensure the primary is within a degree or two will do the trick. My question is this:  I know they sell...

Vic, Though I'm a veteran to cooking chicken, turkeys, pork tenderloin and fish....I finally have found a way to get the ribs to where I call them "good eatin' ribs".  I've probably tried 8 or 9 times on my own (stubborn me for wasting good meat) and they always had an issue with toughness...

New to this forum, but not to smoking meat......

@Husker - What do you think about the MES40?  I saw one on Craigslist for $175 today. I looked at these a while back and liked them but I was turned off by using hockey pucks for smoking generation. I like smoke flavor choices and I can buy a lot of wood mesquite for $15 locally, more than I...
