    First full Brisket

Good point. I think there is a bit too much fetishism about the minute details. The actually cook was "relatively" easy - it was the fire management that was hard. Absolutely, I certainly avoided opening too frequently. Once an hour for the spritz (which I'll do less often next time) and once...

Thanks again, yeah that sort of makes sense. Does many maths above make sense? If I were to drill a single 1.2" diameter hole opposite from my CC inlet?

    First full Brisket

Great advice. Yeah I definitely will be starting WAY earlier next time. I think one of the reasons it really over ran is because I was cooking at 120C rather 135 like you say and it would have a tendency to dip. I'll figure out it out eventually! This was my first brisket so I went on the safe...

    First full Brisket

Firstly following this thread: https://www.smokingmeatforums.com/t...sustain-big-fire-modification-project.287777/ ...I made most of the mods to my Reverse Smoker turning it into a traditional offset. I decided buy/mod this thing so I could try and cook a brisket, having visited Texas (from...

Do you mean in this post? https://www.smokingmeatforums.com/threads/reverse-flow-smoker-how-to-calculate-build-tutorial.268692/ Do the pictures and maths apply to Offsets as well as reverse flow smokers? Using that: FB volume (FBv) = 2924.829cuqIn CC Volume (CCv) = 6003.5976cuIn Desired...

Okay great. I just want to make sure that I don't create to bigger holes and end up ruining it. I'll do the maths and check back here before I take hole saws out!

Interesting, what stops them just being used an exhaust rather than an intake? I remember reading they should be something like 25% of the ideal intake area. (I'll check that figure). Is there a minimum diameter, like is 1" diameter going to be enough? It still worked better after the mods...

Dumb question but how does adding more holes ABOVE the fire increase hot air draw? Also yes, if you use the calculators the air intake size should be ample, which is why I think it might be an issue with it's placement relative to the grate.

Thank you! I am really happy with how it turned out. Tasted grate, I think my guests forgave me for making them wait so long before it was ready (thought it'd take 12-14hrs - it took 17 - probably because the fire would 'dip'). The problem is the difficulty of maintaining the fire is means I'd...

Hi all, following this thread: https://www.smokingmeatforums.com/threads/diy-reverse-flow-smoker-wont-get-hot-or-sustain-big-fire-modification-project.287777/ I have done all of the work we talked about, including learning to weld in the process and have wound up with this: The good news...

What is the purpose of "insulating" the stack

Following this thread: https://www.smokingmeatforums.com/threads/diy-reverse-flow-smoker-wont-get-hot-or-sustain-big-fire-modification-project.287777/ I've decided to take the grind and welder to my smoker and try and convert it into an normal offset. I've been looking into a good stack...

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Ok great! Sorry I hate to ask again, but would you mind confirming that in the previous post you made, where you said I should swap which side the stack is on that you are effectively saying I should turn my reverse flow smoker into a traditional offset. I think that's a good idea, but it's...

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Thanks for the reply. But isn't that junction between a square FB and a cylindrical CC? Wouldn't the intersection of two cylinders be more like the shape in this picture: As my cylinder both have flat ends the FB wouldn't actually be 'inside' the CC, it's just be joined directly onto the side?

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Heres the thing, is it going to make a better reverse flow smoker if I do that, or is it going to never be a better reverse flow smoker because it's too long and thin and a traditional offset is going to produce better results? If the Traditional offset is going to be better I'll just switch...

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Thanks again Dave. But I am struggling a bit to keep up. Isn't the ESV calculation you've listed there specifically for a RV smoker, but didn't you advocate me altering the design so it becomes a traditional offset? Or did I misunderstand that. Apologies for being slow or misreading...

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Hi Dave, To to be 100% clear, what you are actually advocating is converting my Reverse Flow smoker into a traditional Offset? I had thought about this, and I am not against it, in fact I like the idea. I didn't specifically go for a reverse flow, it's just what came my way. And to be clear...

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Thanks for the response. I would rate this mod an 8/10 for difficulty. There is a reasons there is a pipe there and that's to allow for the door of the FB to open! And whilst I am 100% on board with learning to weld, I don't have all of the clamps and benches that'd be required to hold the...

DIY Reverse flow smoker won't get hot or sustain big fire - modification/project

Thanks for such a comprehensive reply. Is there anyway I can prove that this is the case? I thought that if I could artificially reduce is the the chamber to the point where a 4.5" connection is the correct size the that would go some way to showing that this is what needs to remedied. What...

Yep, can give that a go. It's going to look funky. Hmmm, actually I wonder if I have an old 120mm computer cooling fan lying around.

Hi, I had thought about that but I don't currently own anything suitable. I'll have a look online and see if anyone is selling a used leaf blower or similar.
