Great weekend for finally getting to use the smoker. Did 3 racks of baby backs and my buddy brought over a brisket. I made no promises on the brisket since I had never done one. Well I over cooked it just a bit, it was still super tender.
Thanks... By far everyone's favorite part is the wood shelf. I have always tried to do projects that I work on with a little twist just to make it pop. On this one once I saw the wood piece (after looking at hundreds) I knew it was the perfect piece.

Seasoned it over the weekend but took the time to run it and get a feel for it would do.
Took less than 30 minutes to get to 260. Ince it hit 275 I made all my draft adjustments but noticed that by just closing the chimney a 1/4 inch dropped to 250 quickly. I plan on making ribs this weekend...
Getting closer!!! Spent all day Saturday finishing the paint, wiring the lights and putting on the wheels. Got the spalted maple wood on I love the look of it. Was going to season the CC and racks but the weather was on and off rain. Really looking forward to using it.
