Here is my issue with leaving in the temp probe.
When I was a kid, my Mom would cook potatoes in the oven, by inserting a really long aluminum nail through the length of the potato. This sped up the cooking time of the potato by using the aluminum to conduct heat from the oven to its center. ...
Don't get discouraged, you came to the right place. Good advice given.
Beware because the next thing you know you'll be looking up the mods for your smoker :)

Well I figured it is easy enough to send the plates back if they don't fit, so I went ahead on ordered one of these:

I'll update the post on how it works out, just in case someone else has this same grinder.

Yeah, I looked at those, but decided I'd rather spend the $$ on a stuffer than the grinder. This grinder works fine, I just want some larger dies.
What I'm trying to find out is how much "slop" is in these dimensions? I've spoken to people that say they all "fit", but where I come from 1/16"...

1/2" center hole diameter
9/16" square hole for the cutter.

Uniworld Manual Vertical 15 Lb Sausage Stuffer STV7
http://uniworldfoodequipments.com/?p=3183
I'm looking for a 15 lb stuffer after reading all the "sausage stuffer" threads. I also think I've narrowed it down to these two models that are ~$200. Not sure how much...
The one tip I would share is to have whatever you are slicing, semi-frozen. I find that I can't slice bacon, for example, unless it is nearly completely frozen.

Yes it is a commercial slicer (Uniworld SL-300A), she bought it from a restaurant. I tried it out on some smoked cheese I had in the fridge and it worked great.

My wife surprised me today with a new (to me) slicer! Bacon here I come!
She also got me a nice #22 meat grinder. Now to get a sausage stuffer and I'm set!
