    Here is what is going in the smoker today. After these are done and if I'm still standing after the championship football games a cold smoke of cheese and butter is being considered.

    You took that wild turkey to 170* IT I am guessing not 270*. At 270* it would be overdone . If you want to try a beef roast you should read Bear's step by step index. His is an electric smoker but it should work with propane. http://www.smokingmeatforums.com/t/159333/bears-step-by-step-index

    First cold smoke of cheese.

    Here is the pictures So now I'll put it in ziplock bags closed almost all the way but open a little to let out moisture. This will be over night. Tomorrow I'll vac seal some and the rest will be just cling wrapped and put in the frig for eating in a couple of weeks. If I can wait that long.
