I recently purchased the 84" 47180T SH. It has an adjustable charcoal tray under the grates. Anyone with this model have any pointers on how to improve smoking ability with the charcoal/offset firebox side of this monster.

On a different note, next time I make these I'm going to throw the raw rings in the smoker for a bit before they get floured and battered.
I have never tried to smoke an onion so I'm not sure how they are going to turn out.
Fired up the smoker then headed to the grocery store to figure out what was goin in it. I came home with a 3lb tri-tip. Rubbed it with Excalibur "Best steak and roast rub"? Smoked it at 240-265 with hickory, cherry, and mesquite mixture pulled it with an IT of 136 (going to cook a little longer...
