Hey Aggie, Yes, I bumped up the temp more to 220 at about 11 and now back on target..maybe a touch early, but It's at 188 now and should be ready to pull and wrap in a few. Soon as I slice it I'll post more pics.
I lowered my cook to 200 to slow it down, no increased in IT at 200 for the last 2 hours, I have since raised the temp to 210 and may bump it to 220 if I see no increase in IT in the net half hour.
Yes ,EST... 10a now and I just wrapped the small piece with apple juice. The IT is still at 181 with the MES temp set at 200 since 8a. Bumped it back up to 210
I'm in the same pickle worktogthr. I just posted on my "first brisket" thread. 16 pounds of flat and I am at 181 IT already after 8 hours at 230. Waiting to hear some advice for 4pm dinner. Happy 4th. 127878127878

Went into the MES30 @ midnight at 230 deg.
8am and its already at 181 IT. Looks like it might be done too early. How can I slow it down more. Planned on seeving at 4. I lowered the temp to 200. Never got it wrapped with liquid.
