The knife is not sold yet. In fact, I have not had even 1 PM about it, which surprises me a little based on how I priced it. On the other hand, this is not a huge audience compared to EBay.

If they want to spend $5000 on knives, then maybe these should be considered:

Scroll down until you see the URUSHI knives. The decorative wood sheaths are called "sayas"

Craig and Dave,
Thanks for the comments. Somebody will get a "like new" knife for what I believe is a very good price. My wife bought me a hand made Japanese knife for Christmas in 2011. That has started me down another "collection" path, which forces me to thin the herd and sell this knife...
I have a Shun Ken Onion DM-0500 with Bamboo holder that has been used less than 6 times. Otherwise it has been on display in the kitchen. The knife and holder are both in excellent condition. No scratches on the handle or either side of the blade. This knife has NOT been sharpened, as I hope the...
These are great smokers. I am not sure why I limited my smoked food to those things you can make in a Little Chief for so many years.
It seems that running at a lower smoker temperature, say in the 140 - 170 range requires more airflow. I did find that my AMAZEN smoker flamed out at those...
Hey Billy,
What about this one?

I purchased mine last August or so, and am very happy. I added an Amazen and a PID, but you would not have to do that to have a great smoker.

This is the one I purchased:

I modified it for a PID and an AMAZEN, but should be great right out of the box

Hello everyone,
Just to clarify, I an NOT saying that to make the smokers operate as designed, you need to drill holes. I would agree that they will operate as designed with NO modifications.
What I am saying is that if you want to operate them OUTSIDE of their design parameters, then you...
Sarge,
Wrapping in aluminum foil is a pain, but with just a few smokes under my belt, it seemed to make a big difference moisture wise. I wrap somewhere between 140 and 150. Take it up to 200-205 and let it rest. When I unwrap, there is a lot of good juice in the bottom of the aluminum...
I do the same thing with the aluminum foil and use an aluminum cone to punch out as much hole as I want open. Also use the cones to plug the holes when not in use.

Drillers and Non-Drillers,
Do you folks try to time a pulled pork meal to have the whole process finish right when you want to put dinner on the table? I was suggesting to Clarissa that doing so has frustrated me the first couple times I tried it. You are tempted to:
Pull it early (not up...
Moxaman,
Looks like your 2 holes and the size they are is about right. My three 5/8" holes are probably a little overkill. You are right in that temperatures fluctuate throughout the smoker. More so the more you have holes open in the bottom. The reason I mounted mine, well at least one of...
Hi Louballs,
Well, the nice thing about this forum is you can read what everybody else is doing, and determine how applicable it is to your wants and needs. That is what I did before investing my dollars. After doing the research, I determined that the lowest price Cookshack clone I could...
