mason, I just got my MES 40 begin of Jan. The best tips / advice I've encountered is estimate 2hr per lb, use Chef JJs foiling juice, and use the foil method. Link: http://www.smokingmeatforums.com/t/110881/foiling-juice-chef-jimmyj
Made a few already in my MES 40 using this method, they wer...
Wanted to summarize the long thread on 2012 Masterbuilt Smokers - NEW 30" & 40" Models! for those looking for ideas/recommendations on new 2ND GEN 40" MES. I probably did not capture every detail, though hoping I picked up on the top points. Please update as needed.

Great Idea. The link http://www.smokingmeatforums.com/t/133955/2012-mes-40-vs-old-model-mes-40/60#post_924783 shows a post from Grasshopper that used earth magnets (usually pretty strong) to attach, as an idea. If interested google or amazon search neodymium magnets

Called MB with another question, and then also asked about controller back order. Response was they expect me to get one next week. Hoping geerock gets his today.
Great idea, I tried a 6 pan (I think in kitchen speak, this the next size smaller), to attempt allowing for more convection (more opening), instead of removing drip pan altogether but would not fit, must be the "long" end.
Wallingford, I don't disagree. I was not expecting such issues either on a brand new unit, but i had read the threads and expected some issues. I bought mine from local Sam"s in West Haven so if i don't get issues resolved I'll bring it back for refund.
True though days where we expect a...
BTW Magnets are a great idea. I fit the 3" elbow over the existing vent and I did use mine in temps about 30-40 degrees, condensation not that bad though and it may depend on what it is you are smoking.
Another post by Fuzzyfishin (I think) said he removed the existing vent and used the entire...
I can't really say their service stinks or the product, (had mine begin of Jan 2013) since they have been helpful,
although the last attempt for them to replace my control panel they sent me a remote instead.
Called MB service right away last week and they re-ordered the controller,no mention...
must agree with Chef JJ, damn cold here too, although about +20. I also bought a new 40 MES and having temp control issues waiting on new controller, but do enjoy what it can make as is, all in all I'm happy with it.
Just completed my first fatty - went simple -
1/2 ground pork,1/2 ground beef, sauteed onions, garlic, fresh thyme, sliced provolone and fresh jalopeno rings.
My bacon weave so so, only had thick bacon. End result very tasty...removed IT at 170.
When you removed the vent assembly did you use an adapter for the 3" elbow? I'd like to try, but when I looked at removing I was wondering if it was a larger diameter after the assembly is removed.
Great thread, comparison, and data, Todd, I wish I had seen this earlier.
As for the drip pan I also tried without and temps were all over.
I did notice change for the better with food load (in smoker) on 3rd rack from the top (middle), with drip pan in,
temperature differences were only...
