I hung them from the racks, leaving one rack space between slices from bamboo skewers. There's just barely enough room in the MES 30 for 2 racks full. Pics soon.....it's raining pretty hard right now. But I had almost two perfect racks, I was concerned I'd have too much jerky and run out of...
Thanks, I will definitely do that. I did lay them in one piece at a time to get them evenly coated but that doesn't mean they're not folded over from shaking them up.
Hi all, this will be my second batch of jerky. I got the recipes from Cougar78 a few threads down.
About a month and a half ago I made a batch of the basic black pepper jerky in my old Brinkmann charcoal/wood smoker which turned out great but I was fiddling around with that thing all day. Since...
First of all, thanks for the help. I think I used too little of the MTQ for proper curing but I don't expect it to last too long anyway. I can mail some to my son and he'll get it in roughly 2 days so it's not that big of an issue.
Dave, thanks, there is some good reading there. If I ever do a...
MTQ was all I could find locally I'd have bought pink cure if I could find some. I figure I might as well use something I can get locally rather than ordering stuff in, that way whenever the mood strikes I can get things prepped for a smoke without having to worry about being out of something...
Making jerky, I know I don't HAVE to use any cure but I would like to make sure it lasts so I can send some to my son in the mail without any fear of it spoiling.
So I have a 6.5lb eye of round roast and a teriyaki recipe which I found on this site. The recipe is for 5lbs of meat and calls for...
Believe it or not, I'm planning to go ice fishing for some trout after work tomorrow. I've heard that guys are still having a hard time getting through the ice 'cause there is so much of it, need an extension on the auger!
Crazy year to be sure.
Got it unpacked, put together and it's got about another hour left to season. Man did it stink when burning it off. I just put in some hickory chips but opted to go another hour rather than the 45 minutes from the instructions just to make sure everything is good and burned off. I can definitely...
Over the Easter long weekend I brought out my Brinkmann charcoal smoker that I bought probaby 4 years ago from a friend slightly used and promptly put it away and never used. After spending a lot of time on this forum just reading, I made some jerky which turned out pretty darn good using a...
Well I dug the smoker out of the greenhouse this evening so I can clean it up a few evenings this week and get it ready for the weekend. It is a Brinkmann, the smoke box is 3' high by 16" square, it has three racks, a pan for water and a pan below that for the charcoal and wood chips. Bought it...
Hey all, glad to have found this forum. It looks like just what I need. I'm not exactly new to smoking but it's been probably 20 years since I did any and back then I was young and didn't really know what I was doing. So I picked up a smoker a few years ago which has sat in our greenhouse ever...
