First Brisket - wish me luck

Up at 3:30 getting everything more or less ready and got the chimney going in preparation of the smoke on my WSM. Made some rookie mistakes early but I think I'm on the right track now. Here she is just after trimming and with her best dress on (SPOG). Now here she is coming out of the...

10# Brisket on 18.5" WSM - Questions for vets

Thanks Aaron... again, much appreciated! Problem.. well not really.. but the brisket is heavier than I had planned.. almost 13#... You think I can do that in 12 hours if I keep her between 250-260*?

10# Brisket on 18.5" WSM - Questions for vets

Thanks for the advice Aaron!  Will definitely go SPOG (simple and good).  I'll do as you suggested and cook whole.  If I separate at 190* IT should I just re-foil the flat and throw it back on to 205*?  Tbh I'm looking forward to the burnt ends as much as the rest :) I checked that out!  Thanks...

10# Brisket on 18.5" WSM - Questions for vets

Hey all, I did my first smoke three weeks ago... did two whole chickens and some ribs.  Results were amazing.  So, of course, I'm jumping right into a brisket :) This website has a ridiculous amount of helpful information and I've taken it all in but I've got a couple questions for the vets...

    Finally Got It Done

Looks great cornman! Al, I'd love to see a picture of what your son built.  I imagine he used porcelain tile or something else resistant to the heat on the floor?  With the amount of snow we get building a shelter large I can throw a space heater in is a great idea.

    Hi From Kingston Ontario

Thanks, that makes sense.  In the videos I've seen most have the larger 22.5" model and are able to use the top alone.  I haven't actually seen anyone use both.  I'm reading threads left and right and I'm thinking I may have to just step away from the computer.  I just caught myself actively...

    Hi From Kingston Ontario

Thanks so much for the advice!  I've just ordered some of the essentials; the Maverick ET-733, a Weber Chimney Starter, some wood chunks and a few other accessories.  Does anyone ever use the top and bottom rack on the WSM?  I assume the stuff at the bottom would cook more rapidly than what's...

    Hi From Kingston Ontario

Hi Everyone!  Love what I've seen on the site so far!   I'm totally new to smoking, my wife just bought me an 18" Weber Smokey Mountain Smoker for my birthday and I'm pretty stoked (forgive the pun) about it. I've been looking at videos all week and boy am I looking forward to the spring (we...
