OMG I am a dork! Remember I said I pulled a 126?????? Guess what? My probe was set to metric! So it was actually pulled at about 230!!!!! I have that now fixed. That explains the whole pulled easy part.

Well so far everything I have smoked has turned out so good my grill is getting jealous, been reading a lot about fatties and they look too yummy to not try one. I got a brand new bag of RO lump, 1# beef and 1# pork, onions, mushrooms, mozzarella cheese and cheese and bacon sausages to cut into...
On the package was written pallete de beouf, however it did taste like a brisket and the meat guy did say they come from brisket, so I am leaning to they were actually points. To be honest they were so good I don't care what they were lol.

I am in Montreal I would love something like this, bunch of smokers going on, a dip in the pool to cool off (if I ever open it heheh) and lots of good food, beers and conversation.

Well as I said in my other post the store didn't have any brisket left so they sold me this pallete of beef saying it was either close or a part of the brisket. Took 2 of them and hoped for the best.....

thanks for sharing, living in Montreal and loving the spice makes me use it each time. I have yet to try SPOG but from what people say I think I will next time. Also I have never done a reverse sear, looks like I got some work cut out for me this weekend :)
